It's not always easy to prepare pork, especially in the oven, since it has a tendency to get dry and unappetizing. This Pesto Parmesan Pork Chop recipe, however, has a clever way to keep this from happening — topping the meat with pesto sauce and shredded cheese. Not only does this help keep the pork chop tender and juicy, but it also lets the flavors bake into the meat.
Maria from Real Life Dinner wrote on her blog, "When I made these yummy pork chops my husband took one bite and declared, 'This is the best pork chop I’ve ever had.' He’s a pork chop connoisseur, so that was high praise for these Pesto Parmesan Pork Chops." She added later, "The kids even loved these."
Here's how you can make this winning recipe at home.
Preheat oven to 350ºF.
Sprinkle some salt and pepper onto a large, flat cookie sheet. You want to make sure your sheet has a nice edge on it so none of the pork juices end up leaking.
Place 6-8 pork chops about 1-2 inches apart on the sheet.
Lightly salt and pepper the top of each pork chop before spreading 1 tablespoon of pesto sauce on top. (Maria used the Classico brand of pesto!) You can avoid contaminating your jar of pesto by spooning out all of the pesto onto the pork chops first, before you spread the sauce.
Sprinkle each pork chop generously with Parmesan cheese.
Then, bake the pork chops in your oven for about 45-60 minutes. The bake time will depend on how thick your pork chops are.
When finished, serve on top of pasta or potatoes.
