This recipe shared by Aimee from Shugary Sweets is not just delicious and easy, but it’s also the perfect festive dessert to make for everyone!
She made a pumpkin cake with chocolate ganache and shaped it so that it looks just like a giant pumpkin!
“This time I doubled the cake recipe below by baking two bundt cakes,” Aimee wrote on her blog post about the recipe. “I like the height of the cake, plus it kinda looks like a pumpkin!”
It looks way more than just kinda once she frosts it, and it’s also so delicious.
She started off by making the two bundt cakes, which are made with pumpkin puree and the other secret ingredient that keeps it super moist: applesauce.
Of course, you could use the same concept for this pumpkin cake and a different recipe if you have a favorite one you’d prefer to use.
While the cakes were baking, Aimee then mixed together a basic cream cheese frosting using powdered sugar, milk, vanilla, and cream cheese, of course.
In addition, she also made a chocolate ganache to pour over the top, which is easier to add and use if you don’t need the pumpkin cake to necessarily look exactly like a pumpkin.
After both cakes had time to cool, Aimee added a very generous amount of cream cheese frosting on top of one of the cakes. She spread it evenly across the entire surface of the cake and then stacked the second bundt right on top of it.
For the pumpkin version of the recipe, instead of using ganache, she made more frosting that was colored to look like a pumpkin and then covered the entire outside of both cakes.
The ridges from the bundt pan make the cake look just like a pumpkin, and adding a little green stem on top is the perfect touch!
“It’s so rich and most,” Aimee wrote on her post. “Paired with the cream cheese frosting and chocolate ganache, you just can’t go wrong.”
